Pressure Cooker

Pressure cookers are not used as universally in Western countries as they are in India because of different cooking styles, kitchen appliances, and historical safety fears.

  • Boiling vs. roasting — Indian cooking relies heavily on boiling, stewing, and making gravies (dal, curries, rice), which fit a pressure cooker perfectly
  • Western techniques — Western and many other global cuisines focus more on baking, roasting, frying, and grilling, where a pressure cooker isn't useful
  • Ovens and slow cookers — Western kitchens are often built around ovens, stovetop pans, and slow cookers, used instead of pressure cookers to roast meats or simmer stews over long hours
  • Fear of explosions — older generations in Western countries remember stories or accidents involving old stovetop pressure cookers blowing their lids off
  • Loss of control — many home cooks prefer pots where they can easily see and stir the food while it cooks, rather than sealing it under high pressure

Note: traditional stovetop "whistling" pressure cookers are rare in places like the US or UK, but multi-cookers like the Instant Pot have recently made pressure cooking popular again there.

Traditional Stovetop vs. Electric Multi-Cooker

  • The "whistle" count — Indian stovetop cookers rely on a weight valve that vents pressure by lifting and whistling; Indian recipes are usually written by counting whistles (e.g. "cook for 3 whistles"). Electric multi-cookers are silent and cook based strictly on digital timers
  • Heat control — stovetop cookers require manually adjusting the flame from high to low; electric cookers adjust their own internal temperature automatically using built-in sensors
  • Safety features — traditional cookers have a simple safety valve that melts or pops if pressure gets too high; electric multi-cookers feature over a dozen digital safety mechanisms, including lid-locking pins and auto-shutoff sensors, making them nearly impossible to explode

Why Stovetop Cookers Still Dominate in India

  • Speed and power — Indian stovetop cookers heat up much faster on high gas flames than electric elements
  • Habit — Indian home cooks are highly accustomed to cooking by the sound of whistles
  • Cost — traditional aluminium or steel cookers are significantly cheaper and last for decades without needing electronic repairs
